Mexican Omelette

Ingredients

  • 4 Eggs
  • salt and pepper
  • ½ avocado
  • cheddar cheese
  • handful cherry tomatoes
  • ½ cup onions
  • 1 clove garlic
  • 2 tbsp olive oil
  • 2 tbsp crème fraiche
  • 1 sliced jalapeno
  • 100g feta cheese

Method

  1. Saute ingredients on medium heat for 3 mins. Add salt and pepper.
  2. Whisk eggs in bowl and add salt & pepper.
  3. Fry egg on medium heat.
  4. Top egg with ingredients. Fold omelette.
  5. Top omelette with cheese and garnish.
  6. Serve and enjoy.
