Ingredients: 2 cups all‐purpose flour ¾ cup maas ¼ cup vegetable oil ½ teaspoon baking powder Pinch of salt
Method
In a big bowl add the flour, salt and baking powder. Stir to combine the ingredients.
Then add the maas and the vegetable oil. You can now use your hands or a Kitchen Aid with the hook attachment to mix everything together.
Once you have formed a nice dough, knead it for a couple of minutes until smooth. Then shape it into a ball and pop it back into the bowl. Cover the bowl with a clean kitchen towel or some plastic wrap and let it rest for 15 minutes.
Take the dough out and then press it down onto a floured surface before cutting it into 8 equal wedges. Shape each one into a golf ball-sized dough ball and set them aside.
Lightly grease a pan then place it on the stove over a medium heat. Roll each dough ball out using a rolling pin, so that they form mini-flatbreads. Then place each one, one at a time into the hot pan.
Cook for about 40 seconds, then flip it and leave it to cook for about 1 minute before flipping it again. You will see air bubbles in the dough.
When the flatbread has some nice golden marks on it, it’s ready to come out.
You can serve these with a variety of toppings, like cream cheese, pan-fried cherry tomatoes, fresh basil, salt and pepper. Enjoy!
